Our Dance Showcase last December



Dancing is another passion of mine and thought I would share this video of one of our dance routines last December.

When life gives you lemons, Make this lovely Moist Lemon cake

This is a recipe that is a HUGE hit with my kids and never lasts 5 minutes in our house.
(Give it a try....I'm sure you won't be disappointed)!!!
You will need:-
4 Eggs
8oz Butter
8oz Sugar
8oz Self-raising flour
Juice of 2 Lemons
3 Tablespoons Icing sugar

Cream butter and sugar. Alternately add beaten eggs and sifted flour. Put mixture into an 8x8 or 9x9 square or round pan and bake at 400F/Gas mark 6 for approx 50 minutes. (Cake is cooked when a skewer or knife comes out clean).
Mix together the lemon juice and icing sugar. Bring to the boil and immediately pour over the hot cake. Leave in the pan to cool on a cake rack and enjoy.

This method is not always convenient for me if I'm in a rush so I use a loaf tin, lined with ready made liners and put all ingredients in the bowl. As long as enough air is in the mixture, it works perfectly.
